Long Island is really three refrigeration markets
Nassau and western Suffolk behave like dense suburban foodservice: high volume, year-round trading, road-accessible, and mostly retrofits into existing buildings where the door position and panel schedule matter more than the nominal box size.
Central and eastern Suffolk is different. The North Fork runs on agriculture and wine, with short, violent harvest peaks and long idle periods — which makes part-load efficiency the spec that actually decides your running cost. The commercial fishing and shellfish trade out of Greenport, Montauk and the Great South Bay needs cold that holds hard just above freezing without ever cycling into the product, which is a control-tolerance problem rather than a capacity one.
Then there are the places you cannot drive to. Saltaire and the Fire Island villages take delivery by ferry and hand cart. Shelter Island is a ferry crossing. Fishers Island is a boat from New London, Connecticut. On those jobs the panel manifest is the design constraint, and knock-down panel construction is the only thing that works.
Why the trade calls it a "walk-in box"
Because the box and the refrigeration are two different purchases. The box is the insulated panel room. The refrigeration system is what cools it. Plenty of suppliers sell you a box and bolt on whatever condensing unit is in stock — which is how you end up with a cooler that short-cycles, ices its coil, and costs a fortune to run. Foster builds both: the box from 26-gauge galvanized steel panels with foamed-in-place polyurethane insulation, and the matched refrigeration system, sized to your actual heat load rather than a rule of thumb.
How much does a walk-in cooler cost on Long Island in 2026?
As of Q3 2026, an installed walk-in cooler runs roughly $115–$175 per square foot, putting an 8×10 box (80 sq ft) near $9,000–$14,000 with the refrigeration system and installation included. Freezers run $145–$225 per square foot. Difficult access — a Fire Island ferry, a narrow village main street, a long private drive — moves the installation portion, not the box price. How long does delivery take?
